The Small Bites · About 16 little sandwiches
Cucumber Tea Sandwiches
Cool, crisp, and quietly the fanciest thing on the table.
The whole trick is butter to the very edges — it waterproofs the bread — and cucumber sliced thinner than you think reasonable. Cut the crusts off. This is not the time for rustic.

What You Need
- 1 soft white sandwich loaf, thin-sliced
- 4 oz cream cheese, softened
- 1 tablespoon chopped fresh dill
- Butter, softened
- ½ English cucumber, sliced paper-thin
- Salt and white pepper
How It Comes Together
- 01
Butter to the Edges
Butter every slice corner to corner — this is the barrier that keeps the cucumber from making the bread soggy.
- 02
Layer the Cucumber
Spread the dilled cream cheese, then shingle the cucumber slices with a little overlap. Salt and pepper, top, press gently.
- 03
Trim and Stack
Cut off the crusts, then slice each sandwich into thirds or quarters. Stack under a barely-damp towel until guests arrive.
They should look like little white bricks — neat enough to make people smile.
