The Small Bites · About 20 crostini
Whipped Feta & Honey Crostini
Salty, sweet, gone in two bites.
Whipped feta sounds like a restaurant trick and behaves like a food processor button. Make the spread hours ahead; toast and dress the crostini as guests arrive so nothing goes soft.

What You Need
- 1 baguette, sliced ½-inch thick
- 8 oz feta, crumbled
- 4 oz cream cheese, softened
- 2 tablespoons olive oil, plus more for the tray
- Honey, for drizzling
- Fresh thyme leaves
How It Comes Together
- 01
Toast the Slices
Brush the baguette slices with olive oil and bake at 400°F for 8–10 minutes until golden at the edges. Cool on a rack so they stay crisp.
- 02
Whip the Feta
Blitz the feta, cream cheese, and olive oil in a food processor for a full two minutes — longer than feels necessary — until completely smooth.
It goes from grainy to whipped-butter smooth all at once.
- 03
Dress at the Last Minute
Spread generously, drizzle with honey, scatter thyme. Assemble within an hour of serving or the toast softens.
