Butterfly Pea Lemonade
The color-changing one. Yes, it's real.
- butterfly pea flower tea, chilled2
- fresh lemon juice1.5
- simple syrup0.75
- cold water3
- ice
- 1.Brew the Sapphire. Steep the dried flowers in hot water — a teaspoon per half cup — five minutes, covered. Then chill it completely; a warm layer will never float.
- 2.Build the Lemonade. Ice, lemon juice, syrup, and cold water in a tall clear glass, stirred pale and even. Keep it pale — the contrast is the trick.
- 3.The Spoon Pour. Hold a bar spoon upside down just above the lemonade's surface and pour the blue tea slowly over its back, so it spreads and floats instead of plunging.
- 4.Perform the Change. Carry it to the table unstirred. The violet bloom starts the moment the acid meets the blue — let everyone watch it happen.
