№ 01
Rosemary Grapefruit Spritz
The one you make when the afternoon needs a little ceremony.
- fresh grapefruit juice3
- rosemary syrup0.75
- fresh lime juice0.5
- sparkling water3
- ice
- 1.Syrup the Rosemary. Warm equal parts honey and water with two rosemary sprigs until it steams, then pull it off the heat and let the sprigs steep twenty minutes while it cools. Strain and chill — syrup made ahead is the whole secret to a fast build.
- 2.Ice the Glass. Fill a highball with ice all the way to the rim — one big cube if you have it. A full glass chills faster and dilutes slower than a shy half-fill.
- 3.Build the Base. Pour the grapefruit juice, rosemary syrup, and lime juice straight over the ice, then stir once — gently, from the bottom up.
- 4.Top with Bubbles. Tilt the glass slightly and pour the sparkling water down the side so it lands soft. One more slow stir, bottom to top, and stop.
- 5.Wake the Garnish. Clap the rosemary sprig once between your palms to release the oils, then set it in with a grapefruit wheel.
