Star Anise Cherry Shrub
Dark cherries, warm licorice spice, a little swagger.
- star anise cherry shrub1.5
- sparkling water4
- fresh orange juice0.5
- ice
- 1.Macerate and Simmer. Pitted cherries, sugar, red wine vinegar, and star anise go into the pot cold, then up to a bare simmer for twelve minutes — the fruit should slump and give up its color, never boil away its perfume.
- 2.Strain and Bottle. Off the heat, covered, fifteen minutes more — then fine-strain, pressing the fruit gently, and bottle. Cool completely before it meets ice; it keeps a month.
- 3.Chill the Coupe. Put the serving glass in the freezer while you build. Ten frosty minutes is the cheapest luxury on the menu.
- 4.The Stir Down. Shrub, orange juice, and sparkling water in a mixing glass full of ice — stir until the mixing glass frosts, then strain into the coupe and float one pod. Stirring, not shaking, keeps it crystal-clear.
