Watermelon Basil Cooler
Summer, blended and poured over ice.
- fresh watermelon juice4
- fresh basil leaves4
- fresh mint leaves3
- fresh lime juice0.5
- simple syrup0.25
- sparkling water2
- ice
- 1.The Blend. Chunk the watermelon into the blender — loosely, no packing — and run thirty seconds: two on low to catch the chunks, then full speed. Strain through a fine sieve if you want polish, skip it if you want rustic.
- 2.Wake the Herbs. Clap the basil and mint once between your palms — the slap ruptures the leaf cells and releases the oils — then drop them in with the syrup.
- 3.Build and Stir. Ice, watermelon juice, lime juice, and the herbed syrup, stirred from the bottom until the glass frosts.
- 4.Top with Sparkle. Sparkling water, a basil leaf, the smallest melon wedge you can manage.
