The Story
Everything you love about a chai latte, rebuilt as a shrub: apples simmered with cardamom, cinnamon, ginger, and clove, then sharpened with vinegar so it drinks bright instead of sweet. Bottle it in October and you'll pour it through February. It's the most giftable thing on this menu — a swing-top bottle, a ribbon, done.

The Spice Simmer
Chopped apples, sugar, cider vinegar, and the whole spice crew — cardamom pods, cinnamon stick, ginger coins, cloves — into the pot cold, then up to the barest bubble for twelve minutes. Lazy is correct.
A hard boil cooks off the cardamom's top notes. Keep it lazy.

Cool, Strain, Bottle
Off the heat, covered, twenty minutes to finish extracting on the way down — then strain, bottle, and chill. It keeps a month, in theory.
The kitchen will smell like October. That's a feature, not a side effect.

Build over a Big Cube
Shrub poured slowly over one large cube — one cube melts slow and keeps the drink honest all evening.
One cube, slow melt, all evening.

Crown with Bubbles
Sparkling water down the side of the glass, a dried apple slice, and the cinnamon stick riding along as the stirrer.
The stick doubles as the stirrer.
The Method
The Simmer
Simmering is cooking fruit, sugar, spice, and water at the gentlest bubble to make syrups, shrubs, and mulled drinks — the technique that stocks the whole shelf, because everything it makes keeps for weeks.
Twelve minutes at the barest bubble — a boil cooks off the cardamom's top notes. The kitchen will smell like an orchard met a spice market. Cool, strain, bottle, and the month's drinks are made.

The Other Fifty Percent
Half the drink is the recipe. The other half is how it arrives — the glass, the light, the garnish doing its little job.
The Scene
A heavy rocks glass, one big cube, and a wool blanket within reach. Wood table, low lamp, the cinnamon stick doing double duty as the stirrer.
The Garnish, Actually
Lean the dried apple slice against the cube so it stands, and lay the cinnamon stick across the rim. Both survive the whole drink.
