№ 20 — Warm Sips

Vanilla Chamomile Steamer

Warm milk, done properly.

The Story

Warm milk has a nursery-rhyme reputation it doesn't deserve — with chamomile steeped right in and real vanilla, it's the gentlest nightcap on the menu. This is the drink for the person who wants the ritual without the caffeine: ten quiet minutes, a warm mug, and the day officially over.

The Recipe

Makes 1 glass

  • whole milk6
  • dried chamomile flowers1
  • vanilla extract¼
  • honey1
  1. 1

Warm the Milk with the Flowers

Chamomile goes straight into the cold milk, and the two warm up together over gentle heat — steeping in milk is fatter and rounder than water ever manages.

Fatter and rounder than water-steeping — trust it.

  2. 2

    The Covered Steep

When the milk steams, pull it off the heat, lid on, five minutes by the timer.

The meadow escapes with the steam unless you lid it.

  3. 3

    Strain and Vanilla

Strain, then stir in the honey and a quarter-teaspoon of real vanilla — a bass note here, not a solo.

    A quarter-teaspoon — vanilla is a bass note here.

  4. 4

    The Foam Crown

Froth until you have spoonable foam, pour, and float one chamomile flower on top.

The flower floats on foam or not at all.

The Method

The Steep in Milk

Steeping is extracting flavor with water and time — teas, flowers, and botanicals giving up their aromatics to hot water in minutes, or to cold water overnight. The oldest technique on this list, and the one with a timer.

The chamomile steeps directly in the warming milk — fatter, rounder, more comforting than water ever manages. Five minutes covered, strain, then froth. The foam cap is what separates a steamer from warm milk.

Set the Stage

The Other Fifty Percent

Half the drink is the recipe. The other half is how it arrives — the glass, the light, the garnish doing its little job.

The Scene

A wide cup so the foam has room to spread, on a saucer, in the quietest chair in the house. This drink is the end of the day — stage it like one.

The Garnish, Actually

One chamomile flower floated dead-center on the foam. Fresh foam floats it; tired foam swallows it — if it sinks, whisk ten seconds more next time.
